The restaurant, situated in a charming beach house with a garden path leading from the beach, has been a fixture in the area for 20 years.

Pilu at Freshwater offers a menu inspired by Italy’s diverse culinary regions, with a particular focus on the traditional flavours of Sardinia. Chef Giovanni Pilu and his team source the finest local and seasonal produce, complemented by high-quality ingredients imported directly from Italy.  

This commitment to quality ensures that each dish reflects the authentic taste of Sardinian cuisine.  The restaurant is known for its signature dishes, including the slow-roasted suckling pig, prepared maialetto style, which has been a mainstay since the restaurant opened.  

The culinary team also incorporates modern cooking techniques to reinterpret classic dishes, creating a contemporary dining experience while staying true to the traditions and regionality of Italian cooking. They also highlight local Australian produce in their dishes, such as saltbush salt with Skull Island prawns.
